The first became the Solok- a Vigilante exclusive that quickly became a fan favorite. Now, we proudly present to you the second of those phenomenal cups, Kerinci. Using a tradionally Latin American process of washing \u0026amp; fermenting, Kerinci is one of the cleanest cups you'll find in the West Sumatran region. With notes of cacao nibs, dark chocolate, prune, and a velvety body throughout the experience, satisfaction is all but guaranteed. In addition to being a stellar cup on its own, we've transitioned to using Kerinci as a component in our Tin Lizzie espresso blend. It's a classic! We continually look to La Falda for that delicious morning cup. A familiar taste profile that you'd expect from a delicious washed processed Colombian coffee with notes of chocolate, orange marmalade, and a rich toastiness. We enjoy this coffee on filter brew methods most of the time but honestly it's a verstile coffee \u0026amp; can be enjoyed on almost any brew method.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eOne aspect of La Falda that we find the most interesting and is a continuing trend throughout the coffee producing world is that farmers are having to move further up the mountain with their crops. As climate change and rising temperatures continue, the lower elevation farms that used to thrive with coffee now struggle. Ripe with coffee disease \u0026amp; pest that damage crops, many farmers sold their land and moved further up the mountain. This is good in one way because the land is cheaper (because its further from the town) and allows the coffee to thrive in a cool environment. However, there is only so much mountain top to go. Eventually they will run out of mountain and thus we will begin to see a decline in coffee production. These devastating effects will not only impact these farmers welfare and future but also your daily cup of coffee will start costing a whole hell of a lot more. So, what else do they do to help combat this growing problem?…shade trees. In these remote growing regions traditional old growth varietals dominate. This is good for us coffee drinkers because these varietals, while trickier to grow \u0026amp; produce less yield, they make up for it in cup quality. This coffee hails from Tabaconas, Peru and Vigilante Coffee is one of the first roasters to bring to market an isolated Tabaconas specialty coffee. Over the last decades low coffee prices have led to many producers abandoning coffee production due to the lack of profitability. Many coffee farmers in Tabaconas saw drug production as the only perspective for a better economic income. This issue has become a common problem among Peruvian coffee producers, especially in the South where more and more producers start to grow coca leaves. At the same time, Tabaconas has the potential to produce some of the best coffees in Peru and the co-op, Ascafeto is working to help producers make the switch to this alternative to gain a better income. This means that the\n            producers can expect to sell a certain percentage of their coffees at a fair market price, easing some of\n            the risk associated with farming (which is one of the causes of many coffee producers switching to coca\n            production in South America and Peru, specifically). \u003c\/p\u003e\n        \u003cp\u003eWe have featured Tabaconas for several years as a light\/medium roast coffee, featuring it at various times in\n            our cafes on single origin espresso as well as on drip. It’s such a solid brew as a lighter roast that we\n            decided to branch out and try it as a darker roast - originally developed for cold brew - and the results\n            were outstanding!\u003c\/p\u003e\n        \u003cp\u003eToasted coconut aromas meet your nose first with this coffee, whether brewing for cold brew or with\n            pourover\/drip methods, but after the brew the tastes diverge. With a pourover or drip brew, the bold flavors\n            of this darker roast are more pronounced: the caramelized sweetness of molasses, the silky, well-balanced\n            sweetness of prune, the characteristic dark chocolate of a dark roast, and hints of marzipan as a bit of\n            intrigue at the finish. As a cold brew, the flavors are more rounded and congruous: a delightful buttery\n            mouthfeel delivers a super smooth and chocolate dominant brew, with the sweetness of the toasted coconut\n            showing through, and just enough acidity to keep things lively. \u003c\/p\u003e\n        \u003cp\u003eOnce we were satisfied with the roast recipe we set about deciding on a name, and after a long list of\n            submissions (some more absurd than others), we all agreed that Darkslide, a skateboard grind invented by the\n            Godfather of Modern skateboarding, Rodney Mullen, was perfect. And so, the Vigilante Half Caff was born that morning, right then and there.\u003c\/p\u003e\n\u003cp\u003eWe wanted this blend to taste just as great as a regular cup of coffee but with half of the caffeine, but at the same time available all year round, and appealing to our full spectrum of coffee lovers. So for this iteration of the Half Caff, we decided to go with a Colombian blend: we selected our fan-favorite Colombian La Falda and combined it with our Sugar Cane decaffeinated Colombian Madre Laura Decaf for a blend that is characteristically full bodied and rich, with notes of orange, dried fig, pecan on a smooth chocolatey base. Only using components of the coffee cherry, they\n            developed a cold carbonic process which involves placing mature coffee cherries inside stainless steel\n            containers with clean water and injecting carbon dioxide into the tank to dramatically slow down the\n            breakdown of sugars from the mucilage. Next, they inoculated it with a local yeast to speed up fermentation.\n            The coffees were held in the carbonic state for 120 hours then brought to traditional Ethiopian drying beds,\n            one layer thick for the first 48 hours, then 2-3 layers with hand stirring every few hours in a shade-stable\n            drying environment for the first 5 days. This creates even drying for consistency.
