The 27 acre farm, which\n                extends up the hillside above the village towards Mount Balàm (known as “Hill of the Jaguar” in the\n                native language) on rich volcanic soil, is now run by Arnoldo and his wife, Maria Eugenia Escobar, as\n                well as their children. We have been working directly with La Senda since 2019, 2 years after our\n                green-buying partner Thomas of Red Beetle Coffee Lab visited their farm and helped to persuade Alfonso\n                and Maria to switch to specialty coffee production and processing from their more commodity focused\n                production methods. Now known for their more experimental processing techniques, our first La Senda that\n                we are proud to release this year is an extended Carbonic Maceration: ripe cherries are first\n                anaerobically fermented in a bioreactor flushed with Carbon Dioxide, then depulped and anaerobically\n                fermented again, for a total of over 300 hours(!) before being semi-washed in tanks and set out to dry\n                in the shade on African-style drying beds for 4 weeks, constantly being agitated by hand to make sure\n                that all of the beans dry evenly. This year's harvest of La Senda Washed CM is absolutely delicious, offering tasting notes of plum, cacao nib, starfruit acidity, brown sugar sweetness and a smooth, lingering medium body.\n\u003c\/span\u003e\u003c\/p\u003e\n        \u003cp\u003e\u003cb\u003eHow to Brew It:\u003c\/b\u003e\u003c\/p\u003e\n        \u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eBest enjoyed using filter methods to experience the more subtle flavors, this\n                would also perform well on french press. The traditional Costa Rican cup of coffee is a meticulously washed process of the Caturra\n            variety; balanced, smooth, and clean, but not exceptionally flavorful or aromatic. In the years that we have\n            been trying Costa Ricans, many of them have been good, but not noteworthy. So we were very excited to be\n            able to try some of the new wave of Costa Rican coffees, where producers are starting to experiment with\n            less traditional processing techniques to coax more flavor out of their well-loved cherries. From Cafe\n            Rivense del Chirripó, a family owned and operated specialty coffee producer in the South Central region of\n            Chirripó, we are proud to present this Anaerobic Natural processed coffee. Ricardo Ureña Rojas, led by his\n            parents Régulo and Isabel, have taken their carefully hand-picked ripe Caturra cherries, fermented them in\n            sealed tanks where the oxygen has been removed, and laid the cherries out to dry fully before going through\n            the final milling process to remove the cherry husks. This results in an amplified version of some of the\n            best aspects of Costa Rican coffees - and then some. Sourced from our friends Steve and Ashenafi of Unravel Coffee (formerly of\n            Ninety Plus). The Unravel team is world-renowned for producing first-class Ethiopian coffees. They have a\n            technical team at the farm level that guides the coffee through an experimental process.\n\n            This particular coffee was inspired by the rising trend of co-fermented coffees; Steve and Ashenafi wanted\n            to explore a similar approach but with a unique twist. Only using components of the coffee cherry, they\n            developed a cold carbonic process which involves placing mature coffee cherries inside stainless steel\n            containers with clean water and injecting carbon dioxide into the tank to dramatically slow down the\n            breakdown of sugars from the mucilage. Next, they inoculated it with a local yeast to speed up fermentation.\n            The coffees were held in the carbonic state for 120 hours then brought to traditional Ethiopian drying beds,\n            one layer thick for the first 48 hours, then 2-3 layers with hand stirring every few hours in a shade-stable\n            drying environment for the first 5 days. This creates even drying for consistency. The total drying target\n            time is 36-40 days.\n\n            What that translates to is a bright, fruit forward taste profile with notes of pineapple, dark chocolate,\n            and red plum. Muyinga Province is particularly remote, accessible only after a long, rugged journey from Bujumbura (now known as Gitega, the political capital of Burundi), where the country’s largest city once served as the central hub for commerce. Hafi, meaning “close” in Kirundi, reflects the transformative impact this washing station has had on the local farmers. Before its establishment, producers faced long, difficult journeys to deliver their harvest, often unable to meet same-day processing standards. Today, the new wet mill brings them closer to home, unlocking new possibilities for quality and consistency. Crafted using natural processing methods, Hafi offers a deeply aromatic cup with a juicy mouthfeel and tasting notes of strawberry, tropical fruit, blackberry, and a hint of cacao nib.
